Pretty Mommy Recipe Exchange



Man I love a good recipe exchange.  Especially during Fall when all I want to do is bake and cook and put on my "winter coat".  You know, those extra 5 or so pounds..... :)
The lovely Michelle over at Pretty Mommy is hosting this lovely recipe exchange and the recipes from everyone participating have been fantastic!  I am taking a pause from my study break to bring you the most yummy potato soup.  AND, it's easy to boot.....


You'll need:
3 medium red potatoes 
2 cups water
1 small onion
3 tablespoons butter
3 tablespoons flour
crushed red pepper flakes
ground black pepper
3 cups milk ( I do 2 cups milk, 1 cup cream)
1/2 teaspoon sugar
1 cup shredded Cheddar cheese
1 cup cubed cooked ham


How To:
Peel potatoes and cut into 1 inch cubes.  Bring water to boil in large saucepan, add the potatoes and cook until tender.  Drain, reserving liquid.  Set aside your potatoes.  Measure 1 cup of the cooking liquid and set aside.  Peel and finely chop the onion.  Melt butter in a large saucepan over medium heat and add the onion being sure to stir frequently so they do not over cook.  Cook until tender and translucent but not brown.  Add the four to make a roux and add pepper flake and black pepper to taste.  Cook an additional 3 - 4 minutes.  Gradually add the potatoes, reserved cooking liquid, milk, and sugar to the onion/roux in large saucepan. Stir well.  Add cheese and ham and let simmer over low heat for 30 or so minutes stirring occasionally.  Give it time and it will thicken!  Serve with bread or ladle into bread bowls for a comfort meal..

Lady, I think I NEED this soup today. I'm headed to the grocery store to pick up the ingredients this morning. No joke. Sort of wish you could just pop on my by and whip it up for me though. =)

Hope your testing went well. I'm sure you knocked it out of the park -as they say.
